Welcome to Kolo Kai Organic Farm LLC.(formerly known as Ferris Family Farm - same family operation with a new business name ) located on the beautiful sunny island of Kauai, Hawaii.

Kolo Kai Organic Farm specializes in turmeric and 3 varieties of fresh ginger shipped directly to the consumer. All our produce is certified organic by HOFA(Hawaii Organic Farmers Association) with a transition over to  ICS (International Certification Services, Inc) for this coming year.

PLEASE NOTE:  The 2011/2012 harvest season is nearing an end with only MATURE YELLOW GINGER and TURMERIC available.

In 1980 we started growing organic fruits and vegetables. Since 1999 our primary product has been fresh ginger. We harvest the ginger on a per order basis so that you receive the product fresh often a week or less out of the ground.

ALL OUR ROOTS ARE SOLD BY THE POUND .   We use the USPS Flat Rate Box to help keep your shipping cost down. You have THREE sizes of flat rate boxes to choose from. The SMALL box will hold 1 pound of ginger or turmeric. The MEDIUM size flat rate box will hold up to 9 pounds of ginger or 9 pounds of turmeric, with up to 14 pounds fitting in the LARGE box. A combination of boxes to best meet your total order weight will be used to pack your order.

We offer:

• White ginger which is often used in it's baby or young stage for sushi and pickled ginger, but is very tasty in it's mature form with a wonderful flavor preferred by many and generally found in it's mature form in commercial food stores. We can ship you young" baby ginger" September through November on a per order basis. However it is most tender in September and October with it's harder,more mature skin developing more every day through November. We recommend you put dry baby ginger in the fridge in a plastic or paper bag where it will keep for up to two weeks. The older more mature ginger will keep on the shelf for much longer. Both the young and mature gingers and turmeric can be washed and cut into smaller pieces and frozen or juiced for latter use.
  
• Yellow ginger is smaller than the white but often thought to be more pungent and is the variety most often found in health food stores.
• Galangal or Thai ginger is unique unto itself and very pungent. Commonly used in those wonderful Thai dishes we personally love.
• Turmeric is also a root that grows similar to the ginger. It is used in many Asian and Indian dishes. It's pungent flavor adds to curry, rice and stir fry's. It's deep yellow/orange color is often used to brighten foods and added to broaden the flavor. Many people love to juice the turmeric and drink it in other fruit juices or smoothies.
